Brand new from Dingle!
This is the new whiskey in the Dingle Wheel of the Year series, and it’s a tasty little Irish Whiskey! Cónocht on Fomhair, or the Autumn Equinox, is a time in Ireland towards the end of summer, when the days are still warm, but the nights can have a bit of a chill to them. It’s a holiday on the celtic wheel of the year celebrating the onset of winter, so Dingle have chosen a rum cask to finish the whiskey to add some warming sweetness to their single malt whiskey.
It’s a single Malt Irish whiskey, and was, like the other releases aged for about 5 years in ex-bourbon casks, before being given a long finish, or a secondary maturation, for about 2.5 years in ex-Caribbean rum casks. Dingle sourced the barrels from a broker, rather than working with a specific rum producer.
It comes in at 50.5%ABV or 101 Proof, is natural colour, non-chill-filtered and is a relatively limited release at only 4,000 bottles, so let’s dive right into the tasting notes!

Dingle Cónocht on Fomhair Tasting Notes
Nose
There's a lot of citrus up front, with lime leading the charge, behind that is the classic herbal dingle malt with some mint and cooked biscuity grains. The rum finish seems to add fruitiness, with the lime from before, but also some green apple and toffee
Palate
The palate is honeyed and thick, it's still got the herbal and citrus notes from the nose, but with plenty more toffee, caramel and oak spice, balanced against a bit of tart pineapple in the mid-palate
On the second sip, it had some dry oaky notes which remind me of cooked coconut, with some dark cocoa powder also, but kept in balance with the tropical fruits, sweet brown sugar and caramel
Finish
The dry and spicy notes linger on past the sweet caramel on the finish, with some ginger spice, and a hint of tart tropical fruits after a breath
Ultimately, while this is not the best Irish whiskey in the Dingle Wheel of the Year series, it’s by no means the worst. I would rate it as a really nice, enjoyable sipper, which is in the upper middle of the series. As it’s very easy to drink, I wonder how it will compare to the rest of the series, so check back soon for a video comparing the whole series!
