INGREDIENTS:
For chicken masala:
Chicken 500 gm
Onion 2 sliced
Tomato 2 sliced
Ginger garlic paste 1 tbsp
Green chillies 10 (crushed)
Curd 1/4 cup
coriander leaves a handful
Biriyani masala powder 1 tbsp
Turmeric powder 1/2 tsp
Pepper powder 1 tsp
Salt to taste
METHOD:
Take a biryani pot and add all the above ingredients except water. Mix everything well with your hand, then add water and mix again. Cook on low heat for 15–20 minutes. After that, open the lid and mix gently. If there is excess water, cook uncovered until it evaporates. There should be a little gravy left in the Masala.
For Biryani rice:
Cardamom 3
Clove 3-4
Cinnamon 1 piece
Star anise 1
bay leaf 1
Salt to taste
Half lemon juice
Basmati rice 2 cups
Water 2.5 litres
Method:
1. Wash & Soak: Rinse basmati rice 3–4 times until the water runs clear. Soak in water for 30 minutes, then drain.
2. Boil Water: In a large pot, bring water to a rolling boil. Add salt, whole spices, and lemon juice.
3. Cook Rice: Add the soaked rice to boiling water. Cook on high flame until the rice is 85–90% cooked (the grains should be soft outside but slightly firm inside).
4. Drain: Strain the rice immediately to stop further cooking.
For chicken Dum biryani:
Prepared chicken masala
cooked rice
fried cashews and raisins
coriander leaves
Ghee 2 tbsp
Method:
Layer the rice over the prepared chicken masala, then spread fried cashews and raisins, followed by coriander leaves and ghee.
Cover it and Cook on low heat or 10 minutes. After that turn off the flame and let it rest for 15 minutes before serving.
