Chicken Enchiladas Recipe
by Faith and Flour

1 lb Chicken (thighs, breasts or tenders)
1 can Rotel (diced tomatoes & chilies)
1/4 cup Water
1 Tbs Taco Seasoning
4 oz Cream Cheese
6-8 Corn Tortillas
1 Jar Green Enchilada Sauce (I like the Siete brand)
1-2 cups Mexican Cheese blend, shredded

Combine the chicken, Rotel, water and taco seasoning in the Instant Pot and cook for 16 minutes. When cooking is complete, open the sealing valve for a quick release of steam. Transfer the chicken and tomatoes to the bowl of a stand mixer, reserving the juices. Using the paddle attachment, set the mixer to low/medium to start shredding the chicken. While the chicken is still hot, add in the cream cheese and enough reserved juices to keep the chicken moist, but not overly wet. Continue to mix until everything is well combined and the chicken is the desired consistency.
Fill the corn tortillas with the chicken filling. Roll and place seam side down in a greased baking dish. Top with the enchilada sauce and cheese. Bake at 375 degrees F for 20-30 minutes or until the cheese is melted and bubbly. Enjoy!
