There are several Pachamama Statue hidden in Ghost Recon Wildlands. A shrine in Inca Camina where the found statues are placed suggests that there are 8 total.

Some statues are high up on mountains and can only by accessed with a chopper and some are sitting on a rock on ground level.

IMPORTANT: There seems to be a loading glitch at the moment which prevents some statues from spawning in. In that case back out into the menu and reload the game and the statue should appear.

So far there are only 7 out of 8 shrine statues found.
