Bhogichi Bhaji Recipe | Authentic Maharashtrian Vegetable Curry for Sankranti Celebration

Maharashtrian Bhogi chi bhaji | Winter Vegetable Sabzi | Sankranti recipe

INGREDIENTS:
2-3 tbsp of sesame seeds
1 cup peanuts
Vegetables- Harbhara/Green gram
1/4 kg carrots
1 cup green peas
1/4 kg vaal/broad beans
4-5 brinjal chopped and soaked
2 drumsticks
1/4 kg ghevda/flat beans
3 medium sized potatoes peeled and soaked
4 tbsp of oil
1 tsp cumin seeds
curry leaves
1/2 tsp turmeric powder
2 tbsp chilli powder
1 tbsp of goda masala
1 tsp of garam masala powder
2 cups of water
2 tbsp of jaggery
2 tbsp of thick tamarind paste
Salt according to taste

METHOD:
-Roast 2-3 tbsp of sesame seeds, take it out and keep aside after it starts popping
-Roast handful of peanuts in the same kadhai, roast till they change colours, remove it and keep aside
-Once cooled down, crush
-Heat 4 tbsp of oil
-Add 1 tsp cumin seeds, curry leaves
Add all the vegetables one by one- Carrots, Drumsticks, Potatoes, Harbhara, Ghevda, Vaal, Green peas , Brinjal
Mix it well
Add spices- 1/2 tsp turmeric powder
-2 tbsp chilli powder
-1 tbsp of goda masala
-Add 1 tsp of garam masala powder
-Mix well
-Add 2 cups of water
Cover and cook till vegetables are done
2 tbsp of jaggery
2 tbsp of thick tamarind paste
Kut (sesame seeds and peanut coarsely ground)

Add salt accordingly
Give it a final stir
Cover & cook on a med flame for 2-3 minutes
