Shortcake base & topping:
½ cup Sugar
130g Butter
1 tsp vanilla essence
1 egg
2 ¼ cups Self Raising Flour

Filling:
400gm tin of sliced apples
1/3 cup Sugar
1/2 tsp ground cinnamon

Preheat the oven to 175ºC.
Cream butter, sugar and vanilla essence and process until creamy.
Add egg and combine before adding Edmonds Self Raising Flour.
Wrap in plastic wrap, chill for 30 minutes.
Combine apple, sugar, and cinnamon.
Remove dough from chiller and divide into two. Use one dough and press evenly into the base of prepared tin, cover with the apple filling. Crumble the remaining dough over the apples.
Bake for 25-30 minutes & Enjoy
