I drink coffee everyday but from time to time, I love a good matcha. Matcha powder has different grades and the most common ones are ceremonial and culinary. Ceremonial is the highest quality of the two, being typically the first harvest of younger leaves during the spring, and usually produced and consumed by itself. It’s also super expensive! Culinary grade matcha is picked during the second or even third harvest in the summer where the leaves are older and have developed a deeper, less sweet flavour from the sun. It’s normally mixed in lattes, smoothies or used for baking. Another grade is called ingredient, picked even later somewhere, has a yellow-brownish hue, more affordable and is quite bitter… aka Costco lol…

Although there are many factors contributing to matcha quality including growing location, time of harvest and methods of harvesting and processing, colour might be these easiest visual indicator of determining if your matcha is good and fresh! The more vibrant green it is, the more likely it is of higher quality. Typically, the younger the leaf, the more green it is. Again, there’s still a bunch of factors involved, but if your matcha is looking brownish yellowish green… I think it’s time to get a new one lol.
