तांदळाचे उकडीचे मोदक करण्यासाठी लागणारे साहित्य
• १/२ कप आंबेमोहोर तांदूळ
• १ मोठा चमचा साबुदाणा
• १/२ कप पाणी
• १ मोठा चमचा खसखस
• १ चमचा साजूक तूप
• २ मोठे चमचे सुक्यामेव्याचे तुकडे (ऐच्छिक)
• १ १/२ कप खोवलेलं ओलं खोबरं
• ३/४ कप गूळ
• वेलची पूड
• चिमूटभर जायफळाची पूड
• १/२ कप दूध
• काही केशराच्या काड्या

Ingredients:
• 1/2 cup Ambemohor rice
• 1 tbsp Sabudana
• 1/2 cup Water
• 1 tbsp Poppy seeds
• 1 tbsp Ghee
• 2 tbsp chopped Dry nuts (Optional)
• 1 1/2 cup grated fresh Coconut
• 3/4 cup Jaggery
• Cardamom powder
• A pinch of Nutmeg powder
• 1/2 cup Milk
• Few Saffron strands

Method:
• Wash rice and sabudana well together 3-4 times and drain all the water from it.
• Transfer the mixture into a bowl and soak it in water for at least an hour.
• Dry roast poppy seeds until it changes the color a little and transfer it into a dish.
• In the same pan add ghee and dry nuts and fry well until dry nuts get light golden color.
• Adding dry nuts is optional. You can skip it if you don’t want.
• Add fresh coconut and roast it well for about 5-6 minutes. The color of the coconut should not
change.
• Add jaggery and roast it together for about 5-7 minutes.
• When jaggery dissolves, add roasted poppy seeds, cardamom powder and nutmeg powder and
mix well.
• Turn the gas off and stuffing is ready.
• Transfer the soaked rice mixture into a blender jar and blend it into fine paste.
• Strain the paste into a pan and add milk.
• Mix everything well together and turn the gas on.
• Cook it well together until the mixture comes together like dough like tandalachi ukad. Turn the
gas off.
• Cover and rest the ukad for 5 minutes.
• Take the uakd out into a dish and mash it really good with a Katori. Knead the ukad really good
until it becomes nice, even and homogenous.
• Take small portion of the ukad and make it smooth and even.
• Dip it in dry flour and make a as thin pari as possible from it.
• You can use corn flour in place of rice flour or dip your hand in water while making pari.
• Pinch the edge of the pari to make kalya or paklya and make a vati ot karoti of that pari.
• Fill in the stuffing and bring the paklya together.
• Close the modak and seal it well. remove excess udak if any. Garnish the modak with saffron
strands.
• Heat up about water in a steamer and transfer the modak into it.
• Close the lid and steam the modak on medium heat for about 7-8 minutes.
• Turn the gas off and take the modak out. Tandalache ukadiche modak are ready.
• You can make 11 modak from the ingredients used.
