And although the video shows how to make my homemade egg dough, you can use this process to make both of my pasta recipes below!

*Any larger than the two servings below, it's recommended to use the standard size processor instead of the mini that I use in my video!

Semolina Pasta Dough Recipe:
1 cup [180g] of Fine Semolina [Semola Rimacinata], plus more for kneading
100ml Warm Water
*This recipe makes 2 servings

Egg Pasta Dough Recipe:
2 Large Eggs
1 cup of ’00’ Flour, plus more for kneading
1/2 tsp Salt (optional)
*This recipe makes 2 servings (1 Large Egg per Serving)

Common Questions & Things to remember when making fresh pasta…

How much flour do I need to make fresh pasta & How do I know when my pasta dough is ready?
You need as much flour as it takes until your dough is no longer sticky, smooth & bounces back with a gentle finger poke.

How long does it take to cook fresh pasta?
Fresh Pasta is ready to cook immediately in salted boiling water for 2+ minutes depending on the thickness & type of pasta. They will start to float or dance around in your water when ready to test!

What is the best way to store Fresh Pasta for optimal freshness? Do you need to thaw frozen pasta?
Pasta can also be frozen for weeks, best within 1-2 weeks for ultimate freshness. Do Not Thaw, stick directly into boiling salted water, cook time is the same as fresh, maybe a tad longer.

Is fresh pasta really that much better?
Yes it absolutely is better!
