In this cook with me video I make an easy layered enchilada bake. It's a super simple recipe that only has 6 ingredients! Hope you enjoy the video!

Ingrediants:
1 1/2 cups shredded cheese (I use mexican blend)
1 packet taco seasoning
1lb ground meat (I used beef. You could also do it meatless and use beans.)
6 tortillas
1 can enchilada sauce
1 can rotel or diced tomatoes
Instructions:
Cook the meat and add taco seasoning as package directs.
Onces that's done add the rotel, heating till it warm.
In a greased 9x13 pan lay down 2 of the tortillas.
Top with half of the meat mixture, 1/3 of cheese, and 1/3 of enchilada sauce.
Repeat starting with 2 more tortillas.
Finish off with the last 2 tortillas on top with the last third of the cheese and enchilada sauce.
Bake in a 350 degree oven for 20 min.
Great with mexican rice and avocado on the side!
