If you don't want the speaker to turn on automatically when you answer calls on Samsung then what you do is tap on this Phone icon here. Tap on this three dotted icons here and go to "Settings". Select this option "Answering and ending calls" and if you see here there is an option "Answer using speaker". So, if you enable this option then what happens is whenever you answer the call then the speaker will turn on automatically. So, disable this option so that speaker will be turned off.
