Aloo Kathi Roll is an easy and daily use snacks which is loved by everyone in family. They are made from all purpose flour breads, filled with spicy potatoes mixture and further flavored with tasty salad, green chutney and tomato ketchup. Kids love them so you can also pack them in their lunchbox. Do try this amazing snacks recipe at home and enjoy.

Ingredients:

1 ½ cup All Purpose Flour
3 Medium Size Potatoes (boiled and mashed)
1 cup Onions (lengthwise sliced)
4-5 tbsp Cooking Oil
3-4 tbsp Ketchup
½ cup Green Coriander Chutney
½ cup Cabbage (finely chopped)
1 tsp Ginger-Garlic Paste
Salt (according to taste)
½ tsp Red Chilli Powder
½ tsp Turmeric Powder
1 tsp Coriander Powder
1tsp Chaat Masala Powder


Instructions:

1. First lets knead the dough, for this take a big bowl and add all purpose flour, if you want to make it more healthy you can also take ½ qty of all purpose flour and ½ qty of wheat flour. Now add ¼ tsp salt, 1 tbsp oil and mix them well with flour.

2. Once flour is mixed well, add water little by little and knead the dough to medium consistency. Now cover it and leave it for 15-20 mins to let it set.

3. Now lets make salad for kathi roll filling, for this take a small bowl and add shredded cabbage, half quantity of sliced onions, 2-3 tbsp green chutney, little salt, 1 tsp chaat masala and mix them well. Its done so cover it and keep it aside to use later.

4. Now lets make potatoes masala mixture, for this take a pan on medium heat and add 1 tbsp oil. When oil is hot, add rest half of sliced onions and cook them on medium heat for 30 sec, now add ginger garlic paste and saute it for another 30 sec.

5. Once onions and ginger garlic are cooked add turmeric, red chilli powder, coriander powder, 2 tbsp water and mix them for 20-30 secs so that all spices rawness goes away.

6. Now put heat to low and add mashed potatoes, 1 tsp chaat masala, salt, 2 tbsp water and mix it till all spices blends well with potatoes. Now potato mixture is ready so switch off the heat and lets go to next step.

7. Now open the dough bowl and again knead it slightly to make it smooth. Now make small dough balls of this size. Now we will roll them to make round shape parathas.

8. For this apply some oil on the surface where you will roll them and spread it well. Now roll them with a rolling pin into 7-8 inch round disc, we want disc thickness similar to chapatti or like tortilla.

9. Now lets cook paratha, for this heat a tawa on high heat, when its hot, place paratha on it and let it cook. When its cooked from one side u can see its color has changed, so flip it and apply some oil to make it soft and fluffy, then again flip it and also apply oil on this side.

10. Now change heat to medium high and keep pressing and flipping with a ladle and cook for around 1 min. Make sure its cooked properly from both sides. When cooked well you can see nice brown color spots all over it, so take it out in a plate and lets fill the rolls.

11. Put all things in one place and first spread ketchup all over paratha, then put around 2 tbsp potato mixture in center and spread like this, now spread some green chutney over potatoes, add some salad and finally sprinkle some chaat masala for giving a perfect taste.

12. Now roll it, if you want you can also close both ends or just eat as it is. I usually like to eat them after cutting as shown in video. So, now they are ready to serve.


Tips n Tricks:

1. For healthier option you can use wheat flour instead of all purpose flour.
2. You can add more sauces and dressings of your choice like chipotle sauce or mustard sauce.
3. You can also give variation to fillings by adding veggies of your choice.
