Here is a special recipe from Lucknow. It is called Dahi Phulki.
This Dahi Phulki recipe is of a batter fried dumpling that is added to a thinned yoghurt.
Dahi Phulki recipe is made with besan to which a special chili garlic chutney is added.
The yoghurt for the Dahi Phulki is tempered and a special masala added over it.

Recipe :

Dahi Phulki
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 5-6

Ingredients:
250g Besan
5-6 dry whole red chilies, soaked
7-8 cloves garlic
2” ginger
Salt to taste
400g yoghurt
Salt to taste
½ tsp sugar
Masala:
2 tbsp coriander seeds
1 tsp pepper corns
1 tsp fennel seeds
1 tsp cumin seeds
5-6 whole red chillies
Tempering:
2 tbsp oil
2 -3 red chilies
½ tsp mustard seeds
½ tsp cumin seeds
10-12 curry leaves
Green chutney to serve
Seet tamarind chutney to serve

Method:
Grind the soaked red chilies with the garlic, ginger and add to the besan. Add salt to taste, water, a little at a time, mix well to make a smooth batter.
Rest the batter for 10 minutes.
Whisk till the batter is light and fluffy and a drop of it floats on water.
Heat oil in a pan. drop balls of the batter in medium hot oil and fry till the phulki is golden.
Remove the fried phulkis in a bowl of water.
Whisk the yoghurt with salt, sugar and ½ - 1 cup water to thin out the yoghurt.
Heat oil in a pan. Add the ingredients for the tempering. As it crackles, add to the prepared yoghurt.
Remove the phulkis from water. Add to the dahi. Chill.
Sprinkle the prepared masala, chutney and serve.
