Once a common fixture of small farms across America, as Rachel Kornstein of Boondockers Farm explains, they are now sadly on the endangered species list. Most chickens today are a Cornish Cross breed that grow fast and are slaughtered young. In contrast, the Delaware is slaughtered at a mature age and has developed a pronounced flavor from a combination of being pastured raised and allowing to grow older. They must be cooked differently than the standard broiler chicken and Rachel shares some tips on how to cook them.
