Honestly, who doesn't love Chicken Parmesan? Being a billet family for our local QMJHL team, I can't even tell you how many of these meals I've made over those billet years! And of course, served with a big plate of pasta and a cold glass of chocolate milk 🙂 But aside from being a great pre-game hockey meal, this is a hit in our home any other day of the week, no matter what is going on. Served on a bed of pasta or put on a baked sandwich, this crispy chicken meal is so yummy. I love a combination of flavoured bread crumbs and panko breading. It gives the coating that great crunchy texture, especially when it mixes with the olive oil. I also make sure to season the chicken properly along with the bread crumb mixture, it really does add to the flavour. Good seasoning isn't just salt and pepper, fresh herbs also give great flavour. Fileting the chicken breast allows it to cook more evenly and gives a greater ratio of meat to bread crumb coating, lol! A great marinara sauce is a must as well, but sometimes a jar sauce is what you need and that's all good! Can't forget fresh parmesan cheese mixed into the bread crumb mixture and baked on top with mozzarella. A quick few minutes under the low broil and this meal is complete!

It's best served hot and in the moment, but of course is great done in big batches and prepped for meals on the go. It may not be authentic to Italy, but with a little bit of effort, it can a whole lot better than store bought! Chicken Parm...you gotta make it!
