Ingredients:

• 1 ½ cups fresh strawberries, hulled and chopped
• ½ cup freshly squeezed lemon juice (about 2-3 lemons)
• ⅓ cup honey or agave syrup (adjust to taste)
• 1 cup water
• Optional: a few strawberry slices for garnish

Instructions:

1. Blend the Strawberries: In a blender, add the chopped strawberries, lemon juice, honey (or agave syrup), and water. Blend until smooth.
2. Taste Test: Taste the mixture and adjust the sweetness or tartness to your preference by adding more honey or lemon juice if needed.
3. Prepare the Molds: If you’d like, place a few thin strawberry slices into each popsicle mold before pouring in the mixture for a fun look and extra strawberry flavor.
4. Fill the Molds: Pour the blended mixture into the popsicle molds, leaving a small space at the top for expansion when they freeze.
5. Freeze: Insert the popsicle sticks and freeze for at least 4-6 hours, or until fully frozen.
6. Serve: Run warm water over the outside of the molds for a few seconds to help release the popsicles, then enjoy!
