Discover the authentic flavors of Rajasthan with this rich and flavorful Gatte Ki Sabji! This traditional Rajasthani dish features soft gram flour dumplings (gatte) simmered in a tangy tomato-based gravy. Perfect for a hearty meal, this easy-to-make vegetarian recipe is ideal for lunch, dinner, or any special occasion.

Ingredients:

For Gatte:
1 Cup Besan (Gram Flour)
1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder
Salt to taste
Water

For Gravy:
1 tbsp Oil
1 Onion (finely chopped)
2-3 Green Chilies (finely chopped)
1 tsp Ginger-Garlic Paste
1 tsp Cumin Seeds
1/2 tsp Coriander Powder
1/2 tsp Red Chili Powder
1/2 tsp Garam Masala
1/4 tsp Turmeric Powder
1 Tomato (pureed)
1 tsp Coriander Leaves (chopped)
Salt to taste
Water


Instructions:

Prepare the Gatte: Combine besan, turmeric powder, red chili powder, and salt in a bowl. Gradually add water to form a smooth batter.
Steam the Gatte: Steam the batter in small bowls or muffin tins for 10-12 minutes, until cooked through.
Prepare the Gravy: Heat oil in a pan. Add cumin seeds, let them splutter. Sauté chopped onions and green chilies until golden brown.
Add Spices: Add ginger-garlic paste, turmeric powder, red chili powder, coriander powder, and garam masala. Cook for a minute.
Cook the Tomato Puree: Add tomato puree, cooking until the oil separates from the masala.
Simmer the Gravy: Add water to adjust the gravy's consistency. Simmer for 5-7 minutes.
Combine Gatte and Gravy: Add the steamed gatte to the gravy and cook for a few minutes until heated through.
Garnish and Serve: Garnish with chopped coriander leaves. Serve hot with roti or rice.

For a richer flavor, use ghee instead of oil.
Add yogurt or cream to the gravy for extra richness.
