Delicious Prawn Biryani (Serves 6-7)
Ingredients:
1 cup yogurt
1/2 tbsp ginger garlic paste
1 tsp red chili powder (as rq)
1 tsp garam masala powder
1 tsp salt (as rq)
1/2 tsp turmeric powder
1 kg prawns
some oil
300g sliced onion
1/4 tsp salt
2 tbsp ghee
1 tsp cumin
1 tsp fennel seeds
300g sliced onion
1 tbsp ginger garlic paste
2-3 slit green chilies (as rq)
2 sliced tomatoes
2 tbsp water
1 tsp red chili powder
1 tsp coriander powder
1/4 tsp turmeric powder
1 tsp garam masala powder
1/2 tsp salt (as rq)
1/4 cup coriander leaves
ghee
rice (water, 3-3.5 cups rice soaked, 3 cloves, 3 cardamom, 1 bay leaf, 1 cinnamon, and salt. Cook until 90% done.),
food color (1/2 cup milk mixed with 1/4 tsp yellow food color or saffron)
biriyani masala or garam masala (opt)
chopped coriander leaves (I used frozen)

Procedure:
1. In a bowl, add 1 cup yogurt, 1/2 tbsp ginger garlic paste, 1 tsp red chili powder (as rq), 1 tsp garam masala powder, 1 tsp salt (as rq), and 1/2 tsp turmeric powder. Mix.
2. Add 1 kg prawns. Mix. Then, marinate it for 1/2 hour.
3. In a pot, add some oil, 300g sliced onion, and 1/4 tsp salt. Fry until brown. Remove and keep it aside.
4. On the leftover oil, add 2 tbsp ghee and 1 tsp each cumin and fennel seeds. Fry.
5. Add 300g sliced onion. Fry until brown on high flame.
6. Add 1 tbsp ginger garlic paste. Fry well.
7. Add 2-3 slit green chilies (as rq) and 2 sliced tomatoes. Mix.
8. Add 2 tbsp water. Cover and cook until it becomes soft.
9. Open the lid, add 1 tsp red chili powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, 1 tsp garam masala powder, and 1/2 tsp salt (as rq). Fry well till oil releases.
10. Add marinated prawns. Mix till it combines well and boils on high flame.
11. Cover and cook until the prawns are cooked. (Don't over cook or it will become hard.)
12. Add 1/4 cup coriander leaves. Mix.
13. Cover and cook for 2-3 mins.
14. Add ghee, rice (water, 3-3.5 cups rice soaked, 3 cloves, 3 cardamom, 1 bay leaf, 1 cinnamon, and salt. Cook until 90% done.), ghee, food color (1/2 cup milk mixed with 1/4 tsp yellow food color or saffron), biriyani masala or garam masala (opt), birista onion, and prawn gravy.
15. Repeat the process to make 3 layers.
16. On the top layer, add the prawns and repeat the layering.
17. Add chopped coriander leaves (I used frozen) and make holes as shown. Add some ghee (if rq).
18. Cover and cook until 100% done and steam comes. It takes 20-25 mins on low flame.
19. It's done! Serve it hot and enjoy!
