Recipe:
(Serves 4)

Ingredients:
2 tbsp vegetable oil
1 large onion peeled and diced
4 cloves of garlic peeled and grated
3cm chunk of ginger peeled and grated
1 tsp ground cumin
1 tsp ground coriander
1 heaped tsp chilli powder
2 tbsp tomato puree
500ml vegetable stock
800g pre-cooked puy lentils
50ml double cream
1 good handful of spinach
1 bunch of coriander

Method:
- In a hot large saucepan pour in the oil, then fry the onions until soft with a pinch of salt.
- Next add the garlic, ginger, puree and spices to cook out for a few minutes.
- Pour in the stock and lentils, bring up to the boil and reduce to a simmer.
- Next pour in the double cream and simmer for a few minutes.
- Just before you serve stir in the spinach and coriander.
- Check the seasoning and then serve.
