Ingredients:
Mutton Gurda Kaleji: 800 grams
Akha Masala (Grind into coarse powder):
1 tbsp dhaniya seeds
1 tbsp zeera
½ tbsp kali mirch
Sukhi lal mirch (as per taste)

Dry Masalas:
1 tbsp haldi powder
Namak as per taste
Garam masala ya meat masala

Other Ingredients:
4-5 medium chopped piyaaz
3-4 large chopped tamatar
3-4 sliced hari mirch
2 tbsp ginger-garlic paste
Fresh hara dhaniya for garnish


Procedure:
1. Prepare Gurda Kaleji:

Gurda kaleji ko achhe se wash kar lein.

Ek pateele mein paani garam karein, 1 tbsp haldi daalein aur paani ko boil hone dein.

Boiling paani mein gurda kaleji daalein aur 1-2 minute boil karein. Phir nikal lein (zyada boil na karein, warna hard ho jayegi).
Iske baad 1-2 paani se dubara achhe se wash kar lein.


2. Masala Base Banayein:

Ek pan mein 50 ml tel garam karein aur chopped piyaaz ko light brown hone tak bhunein.

Phir ginger-garlic paste daal kar achhe se fry karein.


3. Cook Gurda Kaleji:

Boiled gurda kaleji ko pan mein daalein aur piyaaz aur ginger-garlic ke saath 2-3 minute fry karein.

Namak, haldi, aur garam masala (ya meat masala) add karein. Achhe se mix karein.


4. Tamatar aur Akha Masala Add Karein:

Chopped tamatar aur hari mirch daalein aur mix karein.

Ground akha masala powder daal kar achhe se combine karein.

5. Simmer aur Finish Karein:

Flame low karein, lid lagayein aur 10-15 minute bina paani daalein pakayein.

10 minute ke baad check karein ki gurda kaleji soft hui ya nahi.

6. Garnish aur Serve Karein:

Fresh hara dhaniya daal kar garnish karein.

Garam-garam roti ya pav ke saath serve karein.
