Wow, I truly cannot believe we are already in June. I'm not a fan of Summer in Georgia, so I guess I need to start mentally preparing for the heat. In the meantime, we spruced up our patio, so at least we’ll have a nice place to sit and relax 😎 I hope everyone is doing well and staying healthy. Thank you for your patience as I continue to try and balance my schedule.

🥗 CHICKPEA AND AVOCADO SALAD 🥗

*I add a bag of frozen edamame

🌮 LENTIL TACOS 🌮
Cook lentils according to package
Add a packet of taco seasoning
Add 1 can of beans (I used a trio of kidney, pinto and black beans)
Add 1 can of fire roasted tomatoes
Assemble taco to your taste (I used guacamole, lettuce, green onions, cilantro, and hot sauce)
