Nethi Beerakaya Pachadi is a delicious South Indian dish made with sponge ridge gourd, often referred to as sponge gourd due to its spongy texture. Here's a simple recipe to prepare Sponge Ridge Gourd Pachadi:

Ingredients:

• 2 No. chopped sponge ridge gourd
• 8-10 green chilies (adjust according to spice preference)
• 1 tablespoon tamarind
• 1 teaspoon mustard seeds
• 1 teaspoon Jeera
• 8-10 No. Garlic
• 1 teaspoon urad dal
• 3-5 dry chili
• Few curry leaves
• 2 tablespoons oil
• Salt to taste

Instructions:

1. Heat a pan and add a tablespoon of oil. Add chopped sponge ridge gourd pieces and green chilies, sauté them until they turn soft and tender. Set them aside to cool down.
2. In a mixer or food processor, grind sautéed sponge ridge gourd, green chilies, tamarind, jeera, garlic and salt into a smooth paste. Adjust the consistency by adding a little water if necessary.
3. Heat another pan, add a tablespoon of oil, and let it heat up. Add mustard seeds and let them splutter.
4. Add jeera, urad dal and sauté until it turns golden brown. Add dry chilis and curry leaves. Sauté for a few seconds.
5. Add ridge gourd paste to the tempering and Mix everything well.
6. Adjust salt and spices according to your taste.

Your Nethi Beerakaya Pachadi is now ready to serve. This pachadi makes a great accompaniment to steamed rice, roti, or as a side dish with dosa or idli. The combination of the spongy texture of ridge gourd with spices gives it a unique taste that's both refreshing and flavorful.
