Chocolate Mousse Cake Recipe:
✅For the Cake Sponge:
22 grams cocoa powder
1/2 teaspoon instant coffee powder
100 mls boiling milk
1 egg, room temperature
1/2 teaspoon vanilla
100 grams all purpose flour or plain flour
1/4th teaspoon baking soda
1/2 teaspoon baking powder
1/4th teaspoon salt
100 grams butter, softened and at room temperature
125 grams caster sugar
✅For the Chocolate Mousse:
200 grams semi sweet chocolate, roughly chopped
100 grams milk chocolate, roughly chopped
2 egg yolks
50 grams caster sugar
2 egg whites, room temperature
Pinch of sea salt
400 grams whipping cream whipped (at least 35% fat), chilled
For the Chocolate Glaze:
75 grams semisweet chocolate
75 grams whipping cream, room temp
Notes:
1. Bake the cake in a preheated oven at 180 C / 350 F for 20-25 minutes or until a skewer / knife / toothpick inserted in the centre comes out clean.
2. Ensure you're using a loose bottom cake tin so it's easy to un-mould the cake. I've used an 8" loose bottom cake tin in this recipe.
3. Ensure you're separating the eggs when they are cold as it's easier to keep the yolk intact. There should be NO yolk remains or any fats in the whites or the whites won't whip to the volume needed.
4. Do not leave the yolk out for too long or they will form a skin and it will be impossible to get it to be smooth and well mixed. You'll end up with unmixed chunks of yolks and that is not good.
