Today we have New Zealand Leg of Lamb, marinated with Turkish Style, lots of garlic, salt and olive oil.

Two Stages of Low and Slow

Stage 1: Cook Lamb till internal temp of 60-65c

Stage 2: Wrap lamb in grease proof paper and foil and cook until 95-205c.

Fall off the bone leg of lamb!
