✓ We really have been wanting to catch up with these popular Street Food champions for quite a while now. So it was a real pleasure to finally catch them at this years "Vegan Life Live" event which took place at the world famous Alexandra Palace.

They are inspired by beautiful Mother India (and as you probably know by now) we truly love a place such as this, a pure vegetarian "Desi" Gujarati stall with international influences having healthy vegan food on their menu, wonderfully named dish items such as "Curry Inna Hurry", "Raja Wrap" and "En Root Select"

They serve up wraps and "thali" type boxes with a variety of combinations with the following toppings / fillings:

RAW RAINBOW SALAD RECIPE INGREDIENTS:
Carrot
Cabbage
Spinach
Romano Peppers

RED SPLIT RE-FRIED DAAL:
Plantain
Courgette
Sometimes Brussel Sprouts
Oven baked "Falafel" / Handvo / Dhokla (made with Pigeon Peas, Turmeric, Plantain, Sweetcorn and Chia Seeds.

Seasonal vegetable curries such as: Sweet Potato, Broccoli and Garden Peas curry.

Wraps made with a tortilla flatbread, the thali boxes come with Basmati Rice infused with Turmeric, Cumin and a few other seasonings, they even have toasted crumpets served with the dhal as a topping.

All of their dishes have a topping of freshly sliced Avocado.

Nish also kindly shares his secret method to ripen an Avocado; simply put the avocado with rice and it will speed up the ripening process.

En Root also manufacture their own Hot Scotch Bonnet Sauce called "Raja Bonnet Sauce" which is sweetened with Mango and Dates.

To help it all down they serve a Mango Lassi Smoothie made using Cardamom, Kesar Mango Pulp and Coconut.
