Pastry Dough for Fold-Over Pie:
1 1/2 cups all-purpose ("plain") flour
1/2 teaspoon salt
6 tablespoons (85g) butter
2 tablespoons (25g) vegetable shortening
1/3 cup (79ml) ice water

Put the flour and salt in the bowl of a food processor. Process just to combine -- about 3 seconds. Add the butter and shortening. Pulse the machine 5 times to break up the butter. With the machine running, add the ice water through the processor's feed tube. Process just until the dough begins to form a ball -- 5-10 seconds.

Form the dough into a ball, and then flatten it into a disk. Wrap in cling film and refrigerate for at least 30 minutes (or for up to 3 days).
