Kolkata Special Mutton Rezala Recipe || কলকাতার বিখ্যাত মাটন রেজালার রেসিপি || Mutton Rezala
Ingredients:
1. Mutton: 1.5 kg
2. Yogurt: ½ cup
3. Salt: as required
4. Sugar: ½ tspn
5. Green chilies: 4 pcs
6. Chopped ginger: 4 tspn
7. Garlic: 1 pc
8. Black pepper powder: ½ tspn
9. Nutmeg powder: little amount
10. Onion paste: 1 cup
11. Whole black pepper: 1 tspn
12. Coriander seeds: 1.5 tspn
13. Fennel seeds: 1 tspn
14. Cardamom: 3-4 pcs
15. Cloves: 3-4 pcs
16. Cinnamon: 2-3 pcs
17. Mace: ½ pc
18. Poppy seeds: 1 tspn
19. Almond: 10 pcs
20. Cashew nuts: 14 pcs
21. Ghee: 6-8 tspn
22. Sunflower oil: 2 tspn
23. Water: as required
24. Rose water: 1 tspn
25. Keora water: 1 tspn
26. Dry chilies: 2 pcs
27. Bay leaf: 1 pc
Procedure:
1. Make a fine green paste with green chilies, ginger and garlic.
2. Mix the green paste and salt with mutton and half boil it in a pressure cooker by adding water.
3. Then separate the half-boiled mutton from the mutton stock and keep aside.
4. Then marinate the half-boiled mutton with yogurt, black pepper powder and nutmeg powder and keep aside for 2-3 hrs.
5. Make a fine paste of boiled onions.
6. Make a white paste with poppy seeds, almonds and cashew nuts.
7. Make a dry spice powder using whole spices.
8. Put a kadai in the gas oven and add 4 tspn ghee and 2 tspn sunflower oil.
9. Then add “phorons” in hot oil and stirring it.
10. Then add onions paste and green paste and fry for some times.
11. Then add marinated mutton in the mixture and cook for some times using lid.
12. After some times, add mutton stock in the curry and cook for 10-25 minutes until the meat become fully boiled.
13. Finally add white paste, milk, spices powder, ghee, rose water and keora water in the curry.
14. Mix all the things with the curry and cover for 10 minutes.
15. Finally serve mutton rezala with roti, paratha, nun etc. and enjoy.
