Ingredients:

For the Zucchini:

1.3 kg Zucchini (about 4 medium courgettes)

Salt (to draw out moisture)

Vegetable Oil (for frying)

For the Sauce:

3 Tbsp Soy Sauce

1 tsp Lemon Juice

2 tsp Nutmeg (or substitute with Sesame Oil for a more traditional Asian flavor, see tips!)

2 tsp Lime Juice

3 Cloves Garlic (minced)

1 tsp Sugar

1 tsp Paprika (Sweet or Smoked)

Large bunch of Fresh Parsley (finely chopped)

Instructions:

Prepare the Zucchini: Slice the zucchini into rounds or half-moons (not too thick, not too thin). Sprinkle generously with salt and let rest for about 5 minutes to draw out excess moisture.

Prepare the Sauce: While the zucchini rests, combine all sauce ingredients: soy sauce, lemon juice, lime juice, nutmeg (or sesame oil), minced garlic, sugar, and paprika. Mix well until the sugar dissolves. Add the finely chopped parsley and set aside.

Fry the Zucchini: Heat a small amount of oil in a frying pan over medium heat.

Fry the zucchini slices in batches until golden brown on both sides. Tip: Frying them under a closed lid helps them cook quickly and retain warmth, reducing the need for excessive oil.

Assemble the Dish: Once a batch of zucchini is fried, immediately transfer the hot slices to a serving dish.

Pour a portion of the prepared sauce over the hot zucchini, ensuring every piece is coated.

Repeat the frying and coating process with the remaining zucchini batches. You shouldn't need to add much oil (if any) between batches, as the covered cooking method is very oil-efficient.

Marinate: Once all the zucchini is coated in the sauce, let the dish rest and marinate for at least 1 to 1.5 hours (or up to 2 hours) to allow the flavors to fully penetrate the zucchini.

Serve hot or cold, garnished with extra fresh herbs if desired.

Tips:

Sauce Flavor: The recipe calls for nutmeg, which is unusual in this type of savory, fresh sauce. A great substitute for a more balanced flavor would be 2 tsp of toasted sesame oil or 1 tsp of fresh minced ginger.

Oil Control: By frying the zucchini with the lid on, you use less oil overall and steam the zucchini slightly, resulting in a softer interior and crispy exterior.
