Ingredients for Split Pea Soup with Ham:
1 Tbsp. Olive Oil
1 Medium Sweet Onion (diced)
1 Tsp. Minced Garlic
4 Cups Low-sodium Chicken Broth
4 Cups Water
1 16 oz. Bag Dried Split Peas (picked through and rinsed)
2 Bay Leaves
1Tsp. Fresh Thyme (chopped)
1 Meaty Ham Bone or Ham Shank
1 Cup Carrots (finely sliced)
1 Cup Yellow or Red Potatoes (chopped, optional)
1 Tsp. Black Pepper
Fresh parsley, for garnish (optional)
