It is the feast of St John the Baptist, Sao Joao, and today on this special occasion we’re making Goan mutton curry

Ingredients:
1 kilo mutton
2 coconuts, grated
20 red Kashmiri/Byadgi chillies
1½ teaspoons of turmeric
1 full teaspoon of methi/fenugreek seeds
1½ teaspoons of cumin/jeera seeds
3 tablespoons coriander seeds
4 cups water
4 onions, sliced
2 tablespoons ginger-garlic paste
4 tablespoons oil
2 teaspoons salt

Method:
Start by making the mutton masala

Fry one grated coconut in about 1½ tablespoons oil, till brown

Toast the red chillies, coriander, methi and cumin seeds on a medium flame for a minute, till their aroma arises

While the masala ingredients cool, use the other grated coconut to make thick coconut milk, using about 1½ cups of water

Make the spice paste in the same blender jar used to make coconut milk

Use ample water to make the masala as you have to add water anyway to make a gravy. Mix till you get a fine paste

On a high flame, fry the onions in about 1½ tablespoons of oil, till they are starting to brown

Add the ginger and garlic and cook for a few minutes, till their raw smell goes away

Add the mutton and sear till all the meat changes colour

Add the prepared masala and stir well so that all pieces of mutton are covered with masala

Add the salt and mix well again

Next, add about 1½ cups of water and stir well, turn the heat down to medium-low, cover and leave the curry to simmer till the mutton is done. It took us 40 minutes

You can use a pressure cooker but we prefer to cook meat covered like this

We had checked the meat after half an hour, and gave it another 10 minutes

We also added half a teaspoon more salt, making it total 2 teaspoons for 1 kilo of mutton

Once the mutton is cooked, add the coconut milk and gently stirit into the mutton curry

Let it come back to a boil

The mutton curry is done but for an extra special touch, add 2-3 stalks of tender curry leaves. It will take this mutton to the next level
