Here's a delicious traditional recipe for Boyal Fish Head with Vegetables — a rustic Bengali-style dish that combines the rich flavor of fried boyal macher matha (fish head) with everyday vegetables, creating a comforting and earthy curry.



🐟 Boyal Macher Matha Diye Sobji (Fish Head with Vegetables)

🧺 Ingredients:
Boyal fish head – 700gm (cut in halves or quarters)

Vegetables (customizable):

Potato – 1 large (cubed)

Parwal – 1 cup (cubed)

Cauliflower – 1 cup (cubed)

Eggplant (begun) – 1 small (cubed)

Pointed Gourd – 1 cup (sliced, optional)
Green Shaag Stick - 1 cup

Tomato – 1 medium (chopped)

Ginger crushed – 1 tbsp

Green chillies – 4 (slit)
Dry Chilli
Turmeric powder – 1 tsp

Panch phoron – ½ tsp (or just mustard + fenugreek seeds)


Mustard oil – 5–6 tbsp

Salt – to taste

Water – 1.5 to 2 cups (as needed)

Fresh coriander – for garnish (optional)

🔪 Preparation:


1. Marinate and Fry Fish Head:
Wash the fish head thoroughly.

Rub with salt and turmeric, marinate for 15–20 mins.

Heat mustard oil in a kadai till it smokes slightly.

Fry the fish head till golden and crispy. Keep aside.

2. Fry Vegetables:


In Same Oil add Dry Chilli , Green Chilli, Anch Foron , Asaphoetida
then fry veggies lightly with turmeric and salt.
Now add Tomato cook till the well blended and oil starts separating.

Remove and keep aside.

Pour in 1.5 to 2 cups of warm water.

Cover and cook till veggies are almost done.

Now crush the fish head roughly and add it to the curry.

Mix gently and simmer everything together for 5–7 minutes.

5. Finish:
Check seasoning. Add green chillies.

🍽️ Serve With:
Steamed rice, ghee-bhaat, or even with a side of dal for a full Bengali meal.
