🍇 Homemade Elderberry Syrup

Ingredients:
• 1 cup dried elderberries (or 2 cups fresh)
• 4 cups water
• 1 tablespoon fresh grated ginger (or 1 teaspoon dried)
• 1 teaspoon cinnamon powder (or 1 stick)
• ½ teaspoon cloves (whole or ground)
• 1 cup raw honey (local honey if possible)
• Optional: 1 tablespoon lemon juice (for extra tang and vitamin C)

Instructions:
1. Combine Ingredients:
Add elderberries, water, ginger, cinnamon, and cloves to a medium saucepan.
2. Simmer:
Bring to a boil, then reduce the heat and simmer uncovered for about 45 minutes to 1 hour, until the liquid has reduced by about half.
3. Strain:
Remove from heat and let it cool slightly. Strain the mixture through a fine mesh strainer or cheesecloth into a glass bowl, pressing the berries to release all the liquid.
4. Add Honey:
Once the mixture is warm (not hot), stir in the honey until fully dissolved. Add lemon juice if desired.
5. Bottle & Store:
Pour into a glass jar or bottle. Store in the refrigerator for up to 2–3 months.
