How to Make Any Kind of Vinegar

NOTE on Vinegar Acidity: When doing more research on pH vs acidity, you will find differences in numbers. Some will say non distilled vinegars should read 3.5 pH to equal 5% while others will say 2.5 pH. Some say that distilled vinegars should read 2.5 while non distilled read 3.5. Others quote a general acidity of 2-3 pH to equal 5%. Thus I will still stand by a pH of no higher than 3.5 but can be as low as 2.5.
