INGREDIENTS:

For Marination:
• Mutton – 1 kg
• Curd/Yogurt – 3 Tbsp
• Ginger Paste – 1 tsp
• Garlic Paste – 1 tsp
• Red Chilli Powder – ½ tsp
• Turmeric Powder – ½ tsp
• Mustard Oil – 2 Tbsp
• Salt – 1 tsp

For making the Curry:
• Potatoes – 4-5
• Onion sliced – 2 Nos.
• Ginger Paste – 1 tsp
• Garlic Paste – 1 tsp
• Tomato chopped – 1 large
• Kashmiri Red Chili Powder – 1 tsp
• Turmeric Powder – ½ tsp
• Red Chili Powder – ½ tsp
• Green Chilli – 3-4 pc
• Garam Masala Powder – ½ tsp
• Salt, Sugar, Ghee, Mustard Oil as required

Special Masala:
• Cumin Seeds – 1 tsp
• Fennel Seeds – ½ tsp
• Coriander Seeds – 1 tsp
• Black Peppercorn – 1 tsp

For Tempering oil (Foron):
• Green Cardamom – 5 to 6
• Black Cardamom – 1
• Cinnamon Stick – 1 inch
• Clove – 4 to 5
• Bay Leaves – 2
• Javitri or Mace – small strand
