You’ll learn how to:

Makes a meal for 2.
🔹Ingredients:🔹
2 salsiccia sausages
200 g / 0.4 lbs rigatoni pasta
1 medium size shallot
1 -2 cloves or garlic
¼ tsp smoked paprika
pinch of chilli flakes
2 tbsp of white wine
250ml / ~ 1 cup passata (or crushed tomatoes)
1 tbsp Pecorino or Parmesan
1 sprig of thyme
4-5 leaves of rosemary
salt for the pasta water
🔹Preparation:🔹
1.) Bring a pot of salted water to a boil. Add rigatoni and cook until al dente (about 15 min).
2.) Finely chop the shallot and garlic. Remove sausage from its casing so it cooks faster.
3.) In a large pan with olive oil over medium heat, sauté shallots (30–60 sec), add garlic, then the sausage. Break it apart as it browns.
4.) Add smoked paprika, chilli flakes, then splash in white wine. Let it reduce (~90 sec).
5.) Stir in passata, thyme, and rosemary. Simmer gently for 3 min. Add a splash of pasta water and Pecorino/Parmesan.
6.) Add pasta to the pan, toss to coat, plate, and top with extra cheese and fresh thyme.
