MINESTRONE SOUP RECEIPE

INGREDIENTS USED
Olive oil
1 white onion
2 stalks of celery
2 carrots
1 Sweet potato
Green beans
Cannellini beans
Chopped tomatoes
Tomato Paste
Garlic
Minestrone pasta
Vegetable stock
Spinach
Kale
Salt and Pepper

You can use any vegetables that you like in this receipe.

1. Fry the onions, celery and carrot in olive oil for around 7-10 minutes until slightly softened. Add in the tomato paste, I used around a tablespoon of paste.

2. Add the garlic, sweet potato, green beans and any further vegetables of your choice- Cook for a further 2-3 minutes

3. Add the chopped tomatoes, vegetable stock ( I used 3 cups - 700-800mls) You can always add more water if needed.

4. Leave to cook for about 20 minutes - mostly cover with lid, allowing a little area for the stream to escape.

5. Add in the cannellini beans, pasta and the spinach and kale. Leave to cook for a further 10-12 minutes until the pasta is soft and the vegetables are all fully cooked.

6. Serve with some sourdough, seedy bread or bread of your choice. I also grated a little cheese :)
