1️⃣WATERMELON SALAD
🔹 2 tablespoons honey
🔹 2 tablespoons lime juice
🔹 1 to 2 tablespoons quality extra virgin olive oil I used Greek Early Harvest
🔹 pinch of salt
🔹 1/2 watermelon peeled, cut into cubes
🔹 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
🔹 15 fresh mint leaves, chopped
🔹 15 fresh basil leaves, chopped
🔹 1/2 cup crumbled feta cheese, more to your liking
🔹 Extra virgin olive oil (I used Early Harvest Greek EVOO https://bit.ly/TMD-EVOO)
2️⃣CREAMY CUCUMBER SALAD
🔹 2 English cucumbers
🔹 Kosher salt
🔹 3/4 cup whole milk Greek yogurt
🔹 2 tablespoons red wine vinegar
🔹 Zest and juice of 1/2 lemon
🔹 1/4 cup chopped fresh dill, stems removed, plus more for garnish
🔹 1/2 to 3/4 teaspoon garlic powder
🔹 Black pepper
🔹 1/2 medium red onion, thinly sliced into half moons
3️⃣GRILLED LETTUCE SALAD
🔹 2 to 3 ears corn on the cob
🔹 3 hearts romaine lettuce
🔹 Extra virgin olive oil
🔹 Kosher salt
🔹 10 ounces grape tomatoes (2 cups)
🔹 2 green onions, trimmed and chopped
🔹 1/2 bunch parsley, leaves chopped
🔹 1 teaspoon sumac (optional)
🔹1 teaspoon Aleppo pepper (optional)
🔹 1/2 lemon juiced
4️⃣MEDITERRANEAN CUCUMBER TOMATO SALAD
🔹 6 Roma tomatoes, diced
🔹 1 large English or hot-house cucumber, diced
🔹 1/2 small red onion, thinly sliced, optional
🔹 3/4 bunch parsley
🔹 Kosher salt, to taste
🔹 1/2 teaspoon black pepper
🔹 1 teaspoon ground Sumac
🔹 2 tablespoons extra virgin olive oil
🔹 2 teaspoons freshly squeezed lemon juice
5️⃣GREEK PASTA SALAD
🔹 8 ounces farfalle
🔹 1/2 English cucumber, chopped
🔹 1 green bell pepper, chopped
🔹 10 ounces cherry tomatoes, halved
🔹 1 to 2 shallots, chopped
🔹 1 cup chopped fresh parsley
🔹 2 tablespoons capers, drained and rinsed
🔹 1/2 cup pitted Kalamata olives
🔹 1/3 cup feta cheese
🔹 1 lemon, zested and juiced
🔹 1 tablespoon red wine vinegar
🔹 2 garlic cloves, minced
🔹 1 teaspoon dried oregano
🔹 Kosher salt
🔹 Black pepper
🔹 Extra virgin olive oil
