Kara kaipiddi kozhukattai

Ingredients
1. Parboiled rice 1 cup
2. Salt as to taste
3. Onions 2 medium size
4. Chilli 1
5. Curry leaves few
6. Coriander leaves few
7. Urad dal 1 tsp
8. Kadalai paruppu 1 tsp
9. Oil 2 tbsp

Preparation
Rice batter
1. Soak parboiled rice in water for 2 hours
2. Then wash the rice 2 times and transfer into mixie jar.
3. Add salt to taste and grind with little amount of water into coarse paste

Kozhukattai procedure
1. In a kadai add 2 tbsp oil and add 1 tsp urad dal, 1 tsp kadalai paruppu and roast.
2. Add the 2 chopped onions, 1 chilli, curry leaves and sauté
3. Add the batter and mix everything well.
4. Batter will become thick and holds shape. The dough is ready.
5. In a idly pot make the kaipiddi kozhukattais and steam them for 10 to 12 minutes.
6. After 10 minutes kozhukattais are ready.

Serve the kozhukattais hot.


Sweet kaipiddi kozhukattai

Ingredients
1. Parboiled rice 1 cup
2. Jaggery 3/4 cup
3. Cardamom powder 1/2 tsp
4. Ghee 1 tsp
5. Oil 1 tsp

Preparation
1. Soak the parboiled rice for 2 hours in water
2. After 2 hours wash the rice well and transfer it to a mixie jar.
3. Grind once and then add 3/4 cup jaggery and grind into paste.
4. In a kadai add 1 tsp oil and 1 tsp ghee once heated add the rice batter and mix everything well.
5. Add 1/2 tsp cardamom powder and mix well.
6. The dough holds shape.

2. In a idly pot steam the shaped kozhukattais for 10 to 12 minutes.
3. After 10 minutes sweet kaipiddi kozhukattais are ready.

Enjoy while hot.


Modagam
Outer layer ingredients
1. Rice flour 1 cup
2. Boiling Water 1 1/2 cup
3. Salt as per taste.

Pooranam ingredients
1. Grated coconut 1 cup
2. Raw sugar 3/4 cup
3. Cardamom powder 1/2 tsp
4. Cashew nuts 5 to 6 broken (optional)
5. Ghee 1 tsp
6. Little amount of water

Modagam dough preparation
1. In a bowl add 1 cup of rice flour.
2. Boil 1 & 1/2 cup of water add salt as per taste.
3. Once boiled well add the water in little amounts and mix the dough.
4. Rest the dough for 5 minutes and once able to mix with hands knead into a soft

1. dough.
2. Dough is ready.

Modagam Pooranam preparation
1. In a pan roast 1 cup grated coconut till it becomes dry and smeels aromatic.
2. Then add 3/4 cup raw sugar and mix well.
3. Add 1/2 tsp cardamom powder, 5 to 6 cashews (optional) and 1 tsp ghee and mix well.
4. Add a little amount of water so the raw sugar melts and everything combines well.
5. Pooranam is ready.

Shaping the modagam
1. Take a small lemon sized dough.
2. Apply ghee to your hands.
3. Shape the dough into small bowl and add 1 to 1 1/2 tsp pooranam and shape it into a modagam.

4. With a fork make designs and modagams are ready to steam.
5. In a idly pot steam the modagams for 10 to 15 minutes.
6. After 15 minutes modagams are ready.

Serve them hot.
