Black Sesame Soup

4-6 servings

Ingredients:
Water 8 cups
Black sesame seeds 1 1/3 cups (200 Grams)
Rock Sugar (white sugar will work also) 1 cup (225 Grams)
Glutinous rice flour 3Tbs (50 grams)
Corn starch 1Tbs (15 grams)
Almond butter 3Tbs (45 grams)
Salt to taste

Steps:
1. Toast Black sesame seeds on medium-low heat for 3-5 minutes until fragrant
2. Blend toasted sesame seeds with 2 cups of the water in a blender until it is very smooth (time will depend on the power of the blender)
3. Mix together glutinous rice flour with ½ cup water. Set aside
4. Mix together the corn starch with 1/4 cup water. Set aside
5. Bring all the remaining water to a boil(roughly 5 1/4 cups) and dissolve rock sugar
6. Add the ground sesame, almond butter, and the rice flour slurry into the boiling water
7. Simmer on medium stirring constantly for 7-10 minutes
8. Add corn starch slurry and a pinch of salt, simmer for 1-2 minutes until it reaches your desired thickness.
9. Serve as is or with glutinous rice balls
