THE RECIPE
Serves: 2

INGREDIENTS:
2 tsp oil
4 good quality sausages, skinned, chopped and rolled into meatballs
1/2 onion, finely diced
1 can chopped tomatoes
1 tbsp balsamic vinegar
1 tsp chilli flakes
1 tsp dried oregano
100g dry spaghetti, broken into short pieces
salt and pepper
water to thin the sauce if necessary
paremsan & fresh basil leaves to serve (optional)

INSTRUCTIONS:
Preheat a saute pan with the oil.
Remove the skin from the sausages, cut into 1.5 inch pieces, and roll into little meatballs.
Carefully add the meatballs to the hot fat and cook until the outside is golden brown.
Tip in the onion, the can of tomatoes, vinegar, chilli and oregano.
Let bubble for a few minutes, then break in the dry spaghetti.
Stir well, pop on the lid, turn down the heat and let gently simmer for 8-10 minutes, checking/stirring occasionally. Add a little water/wine if it start to dry out.
Grate/shave over a little parmesan and scatter with fresh basil leaves if you have them and serve.
