HEALTHY ORANGE COOKIES RECIPE

Orange juice from one orange
3 egg yolks
pinch of salt
1 tablespoon vegetable oil - I used olive oil
2-4 tablespoons of desired sweetness - I used agave syrup, 2 tablespoons, I prefer less sweetness
Corn flour 130-140 g
3 heaped tablespoons of ground almonds
1/2 teaspoon baking powder
50 g dried fruit (optional)

Combine all the ingredients except the fruit until fully incorporated. Then add the dried fruit, cut into pieces.

Shape the mixture into small, round cookies and place them on baking paper. Bake for 15 minutes in an oven preheated to 170 degrees.
