Ingredients

For the Chicken:
4 bone-in, skin-on chicken thighs
Salt and pepper, to taste
2 tbsp olive oil
1 tbsp butter
1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
1 tsp smoked paprika (optional, for extra flavour)

For the Caramelized Onion and Mushroom Sauce:
2 medium onions, thinly sliced
8 oz mushrooms (cremini or button), sliced
2 cloves garlic, minced
1/2 cup chicken broth (or white wine for added depth)
1/2 cup heavy cream
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1/4 tsp ground nutmeg (optional, for warmth)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C).
Bake for 30–45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C)
