Iyengar bakery style pineapple cake made in an appe pan is a unique twist on the classic soft and moist pineapple sponge cake, traditionally eggless and flavored with pineapple essence. The appe pan allows for individual mini cakes that are light, spongy, and infused with the flavour of pineapple, replicating the bakery-style texture and taste without an oven.

INGREDIENTS
1/2 Cup Yogurt/Dahi
3/4 Cup Powdered Sugar
3 Tbsp Oil
1/4 Cup Milk
1 Tbsp Butter
4-5 Drops of Pineapple Essence
1 Cup All Purpose Flour/Maida
1 Tsp Baking Powder
1/4 Tsp Baking Soda

METHOD
Mix yogurt and powdered sugar untill well combined.
⁠Add oil, melted butter, milk, yellow food color (optional) and pineapple essence. Mix until well combined.
⁠Sift all purpose flour(maida), baking powder and soda to the liquid ingredients.
⁠Mix the batter till there are no lumps. Fold with a spatula 10-15 times.
⁠Place a non-stick appe pan over a tawa, this way, the cake will not burn. Heat at low flame for 2-3 minutes.
⁠Pout batter in the appe pan pita leaving some gap on the top for teh cake to rise.
⁠Cover and cook at low flame for 20-25 minutes or until the cake is cooked.
⁠Remove immediately. Once cooled, can be stored in an airtight container in refrigerator for upto 1 week.
