I'm back with another easy vegan south Indian platter or meal. All the recipes are naturally gluten free as well! On the menu: Tomato Rice or Thakkali Sadam, Chickpea Sundal or Stirfry, Okra Raita or Vendakkai Pachadi.

Tomato Rice Ingredients:
2 cups chopped tomatoes
1 cup sliced cabbage
1 cup diced green bell pepper
2 Tbsp cooking oil
1 tsp cumin seeds
1 tsp fennel seeds
4 cloves
4 one-inch Ceylon cinnamon sticks
2 star anise
4 Bay leaves
1 tsp turmeric powder
3 tsp coriander seed powder
2 tsp garam masala
2 tsp Kashmiri chili powder
1 tsp chili powder
1/2 cup green peas
2.5 cups water
salt to taste

Vendakkai Pachadi Ingredients:
150g okra
1 cup unflavoured plant-based yoghurt
1/2 tsp mustard seeds
3-4 curry leaves
1 dry red chilli
-1/4 tsp hing
2 Tbsp fresh grated coconut
1 Thai green chili
4 - 5 Tbsp oil
salt to taste if yoghurt is unsalted
