Sunday Funday picklin' with the kids! This is one of my latest obsessions in the kitchen - it's so easy and you can literally pickle anything! I chose my favorite - Watermelon Radishes - as well as cauliflower, red peppers, and baby carrots. I also use less sugar and salt, and lots of garlic and apple cider vinegar - both amazing for your health. Plus, the colorful medley of pickles looks super cute in mason jars and you can stick them in the fridge for up to 2 weeks. Check out my simple recipe below:

RECIPE
Reduced sugar and salt pickling recipe:
1 cup vinegar
2 cups water ,
1 tablespoons salt
2 tablespoons sugar
2 cups of vegetables (cauliflower, carrots, radishes, red peppers)

1. Add first 4 ingredients to a saucepan. Bring to a boil then simmer on low for 10-15 minutes.
2. Add in vegetables and continue to simmer for 5-10 minutes (bigger and stronger veggies would need longer.)*
3. Turn heat off and add veggies and liquid to a mason jar. Cover and keep on the counter for an hour until cooled.
4. Refrigerate and enjoy for up to 2 weeks.

They work great as a midday snack or addition to your salads, sandwiches and cooked dishes.

*Side note: It’s a good idea to cook the veggies in the liquid. I skipped this step in the video because I had to leave the stove to get Julian, but doing so makes them much more tender and delicious!
