Looking for a quick and flavorful weeknight meal? These air fryer chicken skewers are marinated in a delicious blend of smoked paprika, garlic, turmeric, and other spices, resulting in a soft, juicy interior and a perfectly cooked on the outside. To top it all off, we drizzle them with our homemade chipotle sauce for a flavor explosion! We serve them with our homemade orzo pilaf, which is light and fluffy and seasoned with Old Bay for a hint of savory richness. This meal is sure to impress the entire family!

MARINATED CHICKEN RECIPE

INGREDIENTS
• 1 ½ tbsp Smoked Paprika
• ½ tsp Turmeric Powder 
• 1 tsp Onion Powder
• 1 tsp Salt
• ½ tsp Black Pepper 
• ½ tsp Cumin 
• 1 tsp Dried Oregano
• 1 tbsp Worcestershire Sauce
• 2 tbsp Lemon Juice
• ¼ cup Greek Yogurt
• 5- 6 Cloves Garlic
• 3 tbsp Avocado Oil
• 8- 10 pieces of Boneless Chicken Thighs (Diced into bite-size pieces)

INSTRUCTIONS
• Place all of the ingredients in a mixing bowl. Mix well.
• Combine the chicken and coat thoroughly.
• Marinate for at least 4 hours, or overnight.
• Thread chicken onto skewers, about 5-6 pieces per.
• Air fry at 350°F for 12 to 15 minutes.
• Drizzle with our chipotle sauce (see the recipe below).

ORZO HERB RECIPE

INGREDIENTS
• 2 cups Orzo
• ½ cup Red Onion (Diced)
• ½ cup Carrot (Diced)
• ½ cup Red Bell Pepper (Diced)
• 2 cups Chicken broth
• 2 tsp Old Bay Seasoning
• 1 tsp Dried Oregano
• 1 tsp Dried Basil
• 1 tbsp Worcestershire Sauce
• Black Pepper (to taste)
• Parsley (Chopped to garnish)

INSTRUCTIONS
• Sauté onion until translucent (about 3 to 4 minutes) in a large pan or pot over medium-high heat.
• Add diced carrots and pepper and continue to cook for 4 minutes.
• Add orzo and stir for a minute to toast.
• Add the Old Bay seasoning and stir for a few seconds with the orzo.
• Pour the chicken broth and allow it to simmer.
• Add oregano, basil, and Worcestershire sauce. Season with black pepper (½ tsp).
• Season with black pepper and bring the broth to a boil.
• Cover and lower the temperature to low. Cook the orzo for 15 minutes or until they are cooked.
• Remove the cover and fluff the orzo. 
• Season with salt and black pepper if necessary.
• Garnish with chopped parsley

CHIPOTLE SAUCE

INGREDIENTS
• 1 cup Low Fat Mayonnaise
• 2 tbsp Lime Juice
• 2 tbsp Chipotle Pepper (from a can of chipotles in adobo sauce)
• 1 tbsp Honey
• 1 tsp Garlic Powder
• ½ tsp Ground Cumin
• Salt and Black Pepper (to taste)

INSTRUCTIONS
• Combine all of the ingredients in a mixing dish and stir thoroughly.
• Refrigerate for at least an hour before eating.
