WHAT ABOUT NORMA?

Vincenzo Bellini, born in 1801 in Catania, Sicily, composed the opera Norma, which premiered in Milan, Italy, in 1831… Nino Martoglio (1870 — 1921) was an Italian writer, magazine publisher, journalist and producer of theatrical works. He founded a theatre in Catania, Sicily, Italy, in the early part of the 20th century.

Some food historians say this classic southern Italian pasta dish originated in Milan, in 1831, after the premier of Vincenzo Bellini's opera, Norma—others say this savory eggplant dish originated in Catania, a city on Sicily's west coast—and was served at a private party attended by comedic poet, magazine publisher, and theatre owner Nino Martoglio, in 1920. Legend says Martoglio named the dish by saying, “This is the real Norma”—comparing the entrée to Bellini’s masterpiece opera, a year before Martoglio died...


The melanzane (eggplant) dish combined with Perciatelli pasta, fresh garlic, fresh basil, peperoncino, and Pomodoro pelati (Italian peeled plum tomatoes) is topped with Ricotta Salata.


For the last two years, we have made many different types of pizzas to promote National Pasta and Pizza Month... This year, we are making famous pasta dishes to inspire chefs, foodies, and restaurateurs to get excited and prepared for the month-long event... We hope to see more classical and lesser-known pasta dishes served.

Recently, we made the 4 PASTA DISHES OF ROME—now here is an epic pasta dish loved by Italians and food lovers in southern Italy—especially, in the former Kingdom of Two Sicilies—Naples, and Sicily (1816 to 1860).

It’s the season to start ordering specialty ingredients, such as Guanciale and Ricotta Salata to experiment with recipes to make and serve classic pasta dishes like Amatriciana, Gricia, Cacio e Pepe, Pasta alla Norma, and lesser-known pasta dishes that are popular in Italy.

We'd like to see these and lesser-known pasta dishes on more restaurant menus.

THE FRENCH INFLUENCE AND THE HOUSE OF BOURBON


By the early 1500s, Baroque cuisine known as Cucina Baronale had taken hold in Sicily. This is when the TOMATO and chocolate found their way into the Italian pantry…


Maria Carolina (August 13, 1752 – September 8, 1814) was Queen of Naples and Sicily as the wife of King Ferdinand IV of Naples aka King Ferdinand III of The Two Sicilies—Naples and Sicily... She imported French chefs known as the Monzù to the royal court in Palermo, Sicily, in 1805...

Later these chefs that apprenticed under the French Monzù opened restaurants in the former Kingdom of Two Sicilies—Naples, and Sicily (1816 to 1860).



NOTE: Composer Vincenzo Bellini, born in Catania, Sicily, who was known for the opera Norma, and his long-flowing melodic lines for which he was named "the Swan of Catania", died on September 23, 1835 (age 33 years old), in Paris, France...


Interestingly, some nonnas from Catania, Sicily, Italy, have altered the recipe for PASTA ALLA NORMA over the decades since 1the 1920s, to include onions, nutmeg, allspice, ground cloves, fennel seeds, and capers in salt (rinsed and drained)... These added ingredients may reflect old Sicilian traditional family recipes reflective of the Greek, Arab, North African, Norman, Austrian, Swiss, German, Monaco, France, Slovenia, and later House of Spanish Bourbon influence on the cuisine of the former Kingdom of Two Sicilies—Naples, and Sicily.
