Plantation Stiggins' Fancy Pineapple rum is an exceptional rum to sip or to make cocktails with.

With the rise of the craft rum movement, there are so many awesome rums to mess around with. For this Daiquiri cocktail recipe, I used Stiggins' Fancy Plantation Pineapple Rum. Rich, refreshing and comforting, subtle but with a lot of complexity.

It's loaded with tropical flavors: banana, lime & pineapple, along with comforting notes of clove and brown sugar. But it's beauty—its the subtle complexity.⁠

PINEAPPLE RUM DAIQUIRI
1.5oz Plantation Pineapple Rum
0.75oz Simple syrup blend *see below for recipe
0.75oz Fresh lime juice

1 pineapple leaf for garnish

SIMPLE SYRUP BLEND
•100g white granulated sugar
•50g demerara sugar
•150g hot water
Stir thoroughly until sugar is fully dissolved.
