500g fish (preferably Rohu or any firm-fleshed fish)
1 large onion, finely chopped
2 tomatoes, finely chopped
2-3 green chilies, slit
1/2 cup tamarind extract
2 tbsp oil
1 tsp mustard seeds
1 tsp fenugreek seeds
1/2 tsp turmeric powder
1 tbsp red chili powder
2 tbsp coriander powder
1/2 tsp cumin powder
1 sprig curry leaves
Salt to taste
Fresh coriander leaves for garnish

Instructions:

1. *Clean and Marinate the Fish:*
Clean the fish thoroughly, removing scales and guts.
Marinate the fish with turmeric powder and salt. Let it sit for 15-20 minutes.

2. *Prepare Tamarind Extract:*
Soak a small lemon-sized ball of tamarind in warm water for 15 minutes.
Extract the juice and discard the pulp. Set aside the tamarind extract.

3. *Heat Oil and Temper:*
In a deep pan or kadai, heat oil over medium heat.
Add mustard seeds and fenugreek seeds. Allow them to splutter.

4. *Add Onions and Tomatoes:*
