Pollo Fundido

Fundido Sauce

8 ounces cream cheese , softened
1/2 cup sour cream
1 small jalapeño to taste
3 Tablespoons milk
1/8 teaspoon garlic powder
1/8 teaspoon salt
Instructions:

1. Prepare fundido sauce by adding all sauce ingredients to food processor or blender and mix until smooth. Taste and add additional salt if needed. Set aside (or make in advance and refrigerate).

Chicken mixture

4 large chicken breasts
1/2 bell pepper
1/2 onion
1 tomato
1 ½ cups shredded cheese
6 burrito size flour

Instructions:

Chop onion and bell pepper into small pieces. Add to pan with olive oil and cook until onions are slightly browned. While browning work on step 2.
Chop chicken into small chunks. Season liberally with salt and garlic powder. Once onions are slightly brown add chicken to the pan cook until browned and cooked through.
Place a small portion of the chicken mixture into a tortilla. Roll chicken mixture in the tortilla like a burrito.
Add oil to a skillet to just cover the bottom of the pan. Heat to medium. Once the oil is hot, pan fry the burritos until golden on all sides. Place on a paper towel lined baking sheet.
Once all burritos are browned, turn oven to 400. Remove paper towel from under the burritos and spoon some fundido sauce over each burrito. Sprinkle with Mexican cheese.
Cook 10-15 minutes until cheese is gooey and melted. Garnish with green onion.
